About

Tolima department is characterized by its high mountains, fresh weather, and volcanic soil, making it perfect for cultivating exceptional coffee. The Tolima region is one of the most productive coffee-growing areas and has always been represented in the Cup of Excellence, organized by the Colombian Coffee Federation.

About El Indio Process

Despite the constant rain during the harvest season, these farmers, who own less than 4-hectare farms, have truly mastered Natural processing.
In fact, 80% of their coffee undergoes the natural processing method, showcasing their commitment to enhancing the profile and quality of the coffee. After selecting the best cherries, they are placed on raised beds or concrete patios to sun-dry until the coffee achieves the ideal moisture. The quality team monitors the coffee four times a day to ensure even drying.
